Pizza

 
 Pizza is an oven-baked flat bread generally topped with tomato sauce and cheese. It is commonly supplemented with a selection of meats, vegetables and condiments.

 
 In restaurants, pizza can be baked in an oven with stone bricks above the heat source, an electric deck oven, a conveyor belt oven or, in the case of more expensive restaurants, a wood- or coal-fired brick oven. On deck ovens, pizza can be slid into the oven on a long paddle, called a peel, and baked directly on the hot bricks or baked on a screen (a round metal grate, typically aluminum).

 
For pizza lovers like me, a delicious pizza is a gift from heaven. But the explanation for why pizza tastes so good is rooted in science--in this case, the complex chemistry of cheese, dough, and toppings.


It has been declared that mozzarella is the cheese of choice for pizza aficionados--and why one chemical reaction in particular is the key to spectacular pizza. Mozzarella is the best cheese for pizza because it melts, bubbles and browns better than any other varieties.

 Whether it’s a plain cheese, a deep-dish stacked with meats or a thin-crust veggie delight, there’s just something about pizza that makes it delicious. “There’s a lot of chemistry that goes into everything from dough to sauce to toppings to, of course, cheese.” In particular, there’s something called the Maillard Reaction at work — and that’s what we all have to thank for the magical taste we encounter in every bite.

 Why do I enjoy pizza?
 
 Variety
Depending on what toppings one chooses (from pepperoni to anchovies!) pizza can take on a million different flavors. I think that's what people like most about pizza; it's one of the most versatile food on earth!


 Easy to eat
Just pick up a slice, no fork needed :)



Healthy
When prepared properly, it combines all major food groups:
Protein (meat), Starch/grains (crust), Dairy (cheese), & Vegetables.
